    This cheese is made at the Finca Pascualete cheese factory in Trujillo, in Caceres.. Finca Pascualete is a family business whose origins date back to the early years of the 13th century.

    A provocation for the senses, this sheep's cheese is made from pasteurised milk, according to a recipe handed down for centuries by the wisest shepherds in the area. Its appearance, ivory-white in colour with small irregular eyes dotting a creamy but consistent texture, anticipates the pleasure of tasting it.

    It is richly aromatic, with hints of fresh milk, curd and butter, subtle aromas of nuts and vanilla, toffee and spicy spices. The mouthfeel is smooth, with a warm, unctuous and very pleasant impression, and a frank but balanced flavour, with hints of well-evolved sheep's milk curd and spicy and spicy nuances on the finish.
